Seasoned Puffed Provola

With the classic shape of caciocavallo, the provola cheese has a smooth and shiny crust, golden-yellow in color and a soft and compact internal paste. The flavor tends to be spicy as the maturation progresses and the cheese is quite full-bodied, but never hard, thanks to the manufacturing process and the long maturation. In fact, the provola paste is handled for a long time and it is thanks to this process that once matured the inside tends to "flake".

Excellent accompanied with jams, honey or with the Zibibbo grape elixir in contrast with the strong flavor of the cheese, ideal for aperitifs with structured red wine.

The individual forms of provola weigh up to 6/7 kg, on Gocce di Sicilia you can buy matured provola puff pastry in practical slices from 300 grams up to approximately 1.5 kg.

Note on cutting Provola: Here you can buy Montalbano's provola puff pastry in vacuum-packed slices. When ordering, we cut a slice weighing approximately 0.5 kg from the 6-7 kg provola cheese. We always try to have slightly larger cuts, but as they are hand-cut cheeses, the weight can vary and therefore it can happen that they weigh even a few grams less, in this case we will notify you.

The degree of maturation of the provola depends on the period in which the provola is purchased, it ranges from semi-mature to mature, never fresh or too hard provola.
