Valpolicella Classico Superiore 2016 is a DOC denomination wine produced in Veneto by the well-known winery of Giuseppe Quintarelli, located on the first hills of Negrar, 350 meters above sea level. The moderately continental climate typical of Valpolicella and the predominantly calcareous soil give the wine its organoleptic characteristics. The vines used for the production of this still red are the corvina, the molinara and the rondinella.
Corvina is an autochthonous black grape variety of Veneto and has a moderate, regular productivity. Molinara is a native vine of Veneto, whose dark red / violet colored berries have a thick and very pruinose skin. Rondinella is a particularly resistant vine, also native to the Veneto region, which has compact pyramidal-shaped clusters, whose blue / black berries have a thick and very waxy skin. The climate of Valpolicella is characterized by fresh winds from the Lessina which favor viticulture. These in fact make the temperatures during the summer nights cool, facilitating the temperature changes that have a positive effect on the aromatic ripeness of the grapes.
The vinification process begins with the harvest which is carried out strictly by hand, for a careful and painstaking selection of the bunches, in small wooden crates. Subsequently the grapes are subjected to light pressing, maceration for 2 months and spontaneous alcoholic fermentation, with the use of indigenous yeasts for 7/8 days. The subsequent aging phase, which lasts 6 years, takes place in large Slavonian oak barrels.
