Production area: Santo Spirito district, municipality of Castiglione di Sicilia (Catania)

Grape Variety: 98% Nerello Mascalese, 2% Nerello Cappuccino

Vineyard area: 11 ha

Yield per hectare: 6 tons / ha

Soil characteristics: volcanic, deep, mostly volcanic ash, very loose and dark, almost no skeleton

Exposure: north side of Etna at 700-750 meters above sea level

Average age of the vines: from 40 to 100 years

Breeding: traditional Etna tree with single stake

Vinification: alcoholic fermentation at controlled temperature (28-30 ° C)
