PRODUCTION AREA: South-western Sicily.

DENOMINATION: Sparkling Wine Rosé Sicilia Doc.

TYPE: Brut Rosé Classic Method.

GRAPES: Pinot Nero.

LAND AND CLIMATE: altitude 470 - 500 m s.l.m; high hilly orography with northeastern exposure; clayey soils with sub-alkaline reaction (pH from 7.5 to 7.9), rich in nutritional elements (potassium, magnesium, calcium, iron, manganese, zinc); total limestone from 20 to 35%. Mild winters; dry and windy summers with strong temperature variations between day and night.

VINEYARD: espalier training with Guyot pruning; planting density of 4.444 plants per hectare (2.5 m x 0.9 m) and yields of 75-85 quintals per hectare.

VINTAGE: in the 2017 vintage there was 555 mm of rain, a figure that is a little below the average * (661 mm) of this area. The rains were concentrated mainly in autumn and winter and therefore, in the months of June and July, emergency irrigations were carried out; the vines were thus able to complete the vegetative-productive cycle on a regular basis. The temperatures, in particular between July and August, were above the seasonal averages and this led to an advance of 1-2 weeks of the ripening periods of all the cultivated varieties. In this period of summer, the good temperature variations between day and night have resulted in healthy grapes with excellent aromatic and phenolic ripeness. There was a quantitative decrease of about 15% compared to the company average; thanks to careful management of agronomic practices and vinification, from a qualitative point of view, the 2017 vintage produced wines of great finesse. * average rainfall calculated starting from the 2003 harvest and measured by SIAS, Sicilian Agrometeorological Service; in this area, the rainfall data refer to the agricultural year from 1 October to 30 September of the following year.

HARVEST: manual harvesting in crates with careful selection of the grapes, in the first ten days of August in the highest vineyards (470-500 m asl).

VINIFICATION: upon receipt in the cellar, further selection of the grapes on the vibrating table before soft pressing. Fermentation takes place in steel at about 15-16 ° C. The second fermentation in the bottle follows. After the tirage, the Rosé refines at least 36 months on the lees.

ANALYTICAL DATA: alcohol 11.97%; pH 3.05; total acidity 7.4 g / l; residual sugars 6.0 g / l.

FOOD & WINE: a rosé for the whole meal, excellent with raw or cooked shellfish and fish tartare. We recommend it with raw ham. Serve it in medium-sized goblets, without flaring. Open at the moment, excellent at 6-8 ° C.
