GRAPES VARIETIES, AGE AND PRODUCTION AREA: A blend of Nero d' Avola, cultivated in Milici area and a combination of 18 varieties of grapevines from the winery’s experimental field.
POSITION AND SOIL: Plateau with major clay content and high calcareous component. VINE TRAINING: Spur cordon pruning by selecting the buds when vegetative growth starts and targeted manual reduction of the thickness on the vertical trellising; yeld control with thinning-out the bunches in veraison. Harvested when full organoleptic ripeness was reached.
WINEMAKING: The grapes were harvested in small crates of about 14 kg, when there was full polyphenolic ripeness. Then they were pressed, destemmed and sent for pre-fermentation cold maceration for about 72 hours. When the appropriate temperature was reached they were inoculated with selected yeasts to allow the alcoholic fermentation to take place. After 5-7 days of maceration and fermentation kept at a temperature of 22° C, the wine was separated from the marc and left to mature in temperature controlled stainless steel vats.
REFINING: After the cold stabilization phase, the wine was blended and bottled. The bottled product was stored in a temperature controlled environment for a few months for its final maturation.
COLOUR: Deep ruby red colour with violet notes.
PERFUMES: Intense perfumes of sour cherry “marasca”, cherry, plum with clear notes of spice and ink.
TASTE: Smooth, velvety and very drinkable. Sapid, intense, balanced.
ALCOHOL CONTENT: 14.0% by volume.
FOOD MATCHING SUGGESTIONS: Salami, mushroom or goose meat risotto, white meats (poultry and rabbit), fish soup, swordfish cooked Sicilian-style, duck and goose breast, soft goat and cows’ milk cheeses of short maturation (Saint Felicien, Mont d'or, Camembert, Taleggio, Robiola di Roccaverano, Paglierina Piemontese).
SERVING TEMPERATURE: 16 ° C.
AGING POTENTIAL: For its specific characteristics this wine can be consumed and appreciated even over 5/6 years from the bottling, as far as it is stored in a suitable location and at a constant temperature of 12-15°C
