What is Modica chocolate and why is it grainy?

Standard chocolate is conched and refined until it becomes smooth and creamy. Modica chocolate is worked at low temperature, so the sugar crystals do not fully dissolve in the cocoa mass. When the bar cools, those crystals remain visible and give the famous grainy, crumbly texture. The flavour is more direct: cocoa, sugar and spices remain clearly distinct.

What does PGI mean for Modica chocolate?

PGI identifies chocolate produced in Modica according to a specific set of rules: cocoa mass, sugar, low-temperature processing and no added vegetable fats or emulsifiers. It protects the name and the production method. It does not mean that every excellent Modica-style producer uses the PGI label, but it is an important guarantee for many bars in the category.
