Laudàri – Chardonnay DOC Sicilia

Laudàri is the single-varietal Chardonnay of Baglio del Cristo di Campobello, a fresh and fragrant DOC Sicilia white that stays soft on the palate with pleasant fruity notes.

This Chardonnay cannot shun the praise of being first Sicilian, then Chardonnay: the bright white of its origins, the primal purity, the chalky soil of Cristo di Campobello.

Territory and winemaking

The grapes are harvested in August on mainly calcareous hillside soils with dark patches, at around 260 metres above sea level. They are hand-picked into small crates; after destemming and crushing they are chilled to 8-10 °C for a short maceration. After soft pressing, the free-run must settles by cold decantation and, once fermented, ages on the fine lees for three to four months, followed by several months in bottle before release.

Tasting profile

In the words of winemaker Riccardo Cotarella: “Fragrant, with aromas of citrus fruits and flowers and hints of butter, mango and yellow plum on a vanilla-tinged base. Soft and full, well defined by freshness and sapidity, in perfect harmony and with a long-lasting finish. This wine can be cellared for at least 3-5 years.”

Food pairing and serving

Ideal with fish starters and main courses and shellfish. Also excellent with lightly dressed pasta, eggs and risottos, and a surprising match for delicate cured meats and fresh cheeses.
