Terre della Baronia Organic white wine  - Milazzo

GRAPE VARIETALS, AGE AND PRODUCTION AREA: Catarrato Lucido grown in the Garcitella area. Grapevines are 15 years old on average. 

POSITION AND SOIL: High hillside, sloping slightly downwards, facing east, deep organic soil with high clay component.

VINE TRAINING: Annual pruning of shoots (Guyot) by managing of growing buds in midsummer. Early to mid-term harvesting to guarantee freshness of aroma and a balanced acidity.

WINEMAKING: The grapes were harvested and placed in small crates about 14 kg, then remained in cold storage units at 3° C for 24-48 hours. Afterwards they were delicately destemmed, and gently pressed in pneumatic presses. The resulting musts were separated into 2-3 parts which gave the very best must, then there was a second and a third pressing. After a quick cold clarification, the musts were racked and fermented at controlled temperature with selected yeasts in stainless steel vats. 

REFINING: Six months after the harvesting, the different masses were blended and re- assembled into stainless steel vats. After filtration and stabilization the wine was bottled in January 2015. The finished wine was stored at a controlled temperature for a minimum of 4 months until the time of sale and distribution. 

COLOUR: Lucent yellow with greenish glints.

PERFUMES: Variegated bouquet with floral notes of broom, white peach fruit, grapefruit and golden apple with delicious herbaceous notes. 

TASTE: Warm and harmonic, with good acidity, relishing fruity notes with persistent and mineral finish.

ALCOHOL CONTENT: 12.5% by volume. Well balanced with the alcohol contributing to mellow the acidic freshness.

FOOD MATCHING SUGGESTIONS: Appetizers, pasta with fish or vegetables, second courses of fish or delicate cheeses.

SERVING TEMPERATURE: 10-12 °C

AGING POTENTIAL: Thanks to its balanced acidity and good level of complexity it can be drunk even 3 years after bottling, as long as it is kept in ideal conditions and at a constant temperature not exceeding 12 °C.
