Rubric: The recipe of the month. Tagliolini with Pistachio Pesto, Guanciale and Burrata.

In this article we will talk about a super tasty and super creamy first course. Where the delicacy and sweetness of the burrata marry perfectly with the flavor of the bacon and pistachio pesto.

One of the undisputed protagonists of this recipe is Pistachio Pesto, which in Sicily is undoubtedly one of the most used condiments of all, being one of the tastiest as well as one of the most versatile.

Another great protagonist of this recipe is Pork Guanciale, a very tasty type of cured meat, thanks to the addition of aromas and spices such as sage, rosemary and black pepper.

INGREDIENTS for 4 people:

- 360 g of Tagliolini (or spaghetti). We recommend the Pistachio Tagliolini which give an additional touch of deliciousness.

- 150 g of pistachio pesto

- 150 g of bacon

- 300 g of Burrata

- to taste Pistachio grain

- to taste salt

- to taste black pepper

PREPARATION

In a pan, start cooking the Tagliolini. Or, if you prefer, you can risotto them in a hot pan by continuously adding cooking water.

While the pasta is cooking, brown the bacon in a pan until it becomes crispy.

In a bowl proceed to create the mixture. Mixing Pistachio Pesto, Burrata, a pinch of Salt and Pistachio Crumbs.

Once the Tagliolini are cooked and drained, add them to the pan with the Guanciale and mix.

Then add the mixture of pesto, burrata and grains into the pan and mix everything vigorously.

Now it's time to serve and enjoy this wonderful Sicilian first course.

COMBINATIONS

You can pair this first course with a good white wine such as Donnafugata's Damarino, which will go very well with these flavours.
