OUR RECIPES - Limoncello di Sicilia:

DOSE FOR 2 LITERS:

- 10 NON-TREATED LEMONS

- 1 LITER OF PURE ALCOHOL AT 95%

- 600 GRAMS OF SUGAR

- 1 LITER OF WATER

PROCEDURE:

Wash the lemons well with a metal sponge, dry them and peel them with a potato peeler, removing only the yellow part and leaving the white and spongy one on the lemon, as it could give a bitter taste to the liqueur. Place the lemon peels in an airtight glass jar and macerate them in pure alcohol for 3/7 days in a cool place away from light. Shake the jar every day to mix the ingredients well.

After the necessary time, filter the liquid with a sieve and immediately prepare the syrup. Put the water and sugar in a saucepan and bring to a boil, stirring constantly until the sugar is completely dissolved.

Let it cool and add the liquid flavored with lemon zest to the syrup, mix well and pour into one or more sterilized and airtight glass bottles.

Keep cool and dark for at least 30 days before consuming.

Tips:

To cut the lemon peel, if you can, use ceramic knives or tools that help preserve all the active ingredients and benefits of the essential oils contained in the peel.

During the maceration and storage phase, always keep jars and bottles in a cool and dark place as the active ingredients are sensitive to light and heat and this could compromise the flavor of the limoncello.


For the preparation use only pure quality alcohol, to prevent it from freezing once in the freezer, and lemons preferably from Sorrento or otherwise organic and not treated with thick and wrinkled peel.

You can increase or decrease the amount of sugar according to your taste.

If you love the flavor of lemon, you can also prepare the limoncello cream, adding milk and cream to pure alcohol, lemon zest and sugar. A fresh and creamy liqueur ideal after a meal.

How to store limoncello:

Once ready, the limoncello can be stored for a long time in the fridge or freezer: the presence of alcohol and sugar will prevent it from freezing.

- Lemon granita:

INGREDIENTS:

- 500 ml of lemon juice

- 500 ml of water

-250 g of sugar

PROCEDURE:

Preparing lemon granita without ice cream maker is very easy and will allow you to obtain a fresh and thirst-quenching after meal!

The granita is made with a semi-frozen mixture prepared with water, sugar and lemon juice. During the preparation of the lemon granita it is very important to stir continuously so that the water does not separate from the juice, forming ice crystals.

Start by pouring the water into a saucepan, bring it to a boil and add the sugar. When the sugar has completely dissolved and the liquid has become transparent, turn off the heat and let the syrup cool down.

Cut the lemons in half, squeeze them with a juicer and filter the juice very well, with the help of a colander: you will need to obtain 500 ml of filtered juice. Incorporate it into the now cold syrup and mix the mixture well with the help of a whisk.

At this point, put the lemon granita in the freezer in a (covered) plastic or metal container. After half an hour, remove the mixture from the freezer and stir vigorously to break the ice crystals that will have formed. Repeat the same operation every half hour (or every quarter of an hour if you see that the mixture tends to compact more quickly) for another two to three times, until you get your lemon granita!

STORAGE:

You can keep the lemon granita without ice cream maker in the freezer for up to 15 days.

ADVICE:

If the slush freezes too much, you can break the ice coarsely and quickly pass it in an ice crusher or mixer to chop it more finely.
Enrich it with a little of our Ionic gin at the end of a meal or enjoy it on hot summer afternoons with our brioche.
