Guide to Sicilian pistachio: how to choose and use it

Sicilian pistachio is one of those ingredients that can change the way you think about pistachio. But there is an important distinction: Pistachio di Bronte DOP is a certified product with specific rules and origin, while the broader category may also include excellent Sicilian pistachio products that are not DOP. For this reason, the safest rule is simple: if you specifically want DOP, check that the individual product clearly states it.

What is the difference between Sicilian pistachio and Pistachio di Bronte DOP?

Sicilian pistachio is a broader expression that can include pistachios grown, processed or used in Sicily in different forms. Pistachio di Bronte DOP, on the other hand, is a protected designation: it refers to pistachios produced in a defined area and according to a specific production standard. It is the most famous Sicilian pistachio, but not every pistachio cream, pesto, granule or pastry ingredient can legally be described as Bronte DOP. On Gocce di Sicilia we prefer to keep this distinction clear: DOP is mentioned only when the product label and certification allow it.

Why is Etna-area pistachio so appreciated?

Pistachio linked to the Etna area is appreciated for its intense colour, aromatic profile and natural sweetness. Volcanic soils, dry conditions and traditional processing can produce pistachios with a strong identity. This does not mean that every green cream or every pistachio product is automatically Bronte DOP; it means that Sicily has developed a strong pistachio culture in both sweet and savoury recipes.

Which format should I choose?

Whole pistachios are best for snacking and cooking. Shelled natural pistachios are ideal for pastry and pesto. Granules are practical for decorating cakes, gelato, pasta and meat. Flour works in gluten-free baking and biscuits. Sweet pistachio creams and savoury pistachio pesto are ready-to-use versions for very different purposes.

Is artisan pistachio cream really different?

Yes. A good pistachio spread should taste of pistachio, not only of sugar and flavouring. Artisan creams usually contain a meaningful percentage of nuts and have a natural, less fluorescent colour. They are excellent on bread, croissants, cakes, pancakes and as a filling for desserts. If the cream is made with Pistachio di Bronte DOP, that should be clearly stated on the product page.

How do I use pistachio pesto?

Pistachio pesto is excellent with short pasta such as rigatoni or casarecce. Dilute it with a little pasta cooking water and add it off the heat. It pairs well with sausage, pancetta, ricotta, pecorino, cherry tomatoes and even fish. Do not overcook it or the aroma and colour fade.

How is pistachio used in Sicilian sweets?

Pistachio appears in gelato, granita, cannoli, biscuits, cakes and Sicilian panettone. It also pairs well with chocolate, almond pastry and citrus. This is why it is connected to both the Sicilian sweets category and the pastry tradition of the island.

Can pistachio be used in savoury dishes?

Absolutely. Pistachio granules make an aromatic crust for tuna, swordfish or chicken. They work on tartare, with fresh cheeses, in salads and with honey on a cheese board from the salumi and cheeses category.

How should pistachio be stored?

Keep it in airtight containers, away from light, heat and strong smells. For larger quantities, the freezer is useful. Opened creams and pesto should be kept in the refrigerator and consumed according to the label.
