TARANTELLO OF TUNA WITH OLIVE OIL
Its name originates in Taranto, home of ancient traps where for the first time its processing technique was developed, to then be handed down to the Sicilian traps.
Tarantello is a very soft and delicate fillet of meat, which is obtained from the lower part of the abdomen of the tuna, an intermediate area between the fattest and the leanest part.
It differs from the ventresca, because it largely retains its taste, losing a good percentage of fat consistency; differs from tuna fillets because it retains a greater softness.
The perfect cut, which in addition to taste also offers many nutritional elements.
All tuna are cleaned by hand and without chemicals. Once cleaned and cooked in water and salt, the best slices of ventresca are filleted and placed by hand in glass jars with olive oil. The tarantello jars do not contain preservatives or flavor enhancers.
Recommendations for use:
Ideal to be enjoyed as an appetizer or as an alternative to a main course of fish, simply seasoned with a few drops of lemon.
Or excellent as a base for the preparation of fish sauces to dress spaghetti, linguine or paccheri.
Once opened, keep refrigerated and use within 3 days.
