Mofete is an excellent red produced on the slopes of Etna by Palmento Costanzo.
It has a strong ruby red color, and on the nose it is floral and fruity, on the palate it is very fresh but with a savory finish.
Excellent to combine with meat main courses such as Lamb and Beef. But also a good plate of pasta with tomato sauce.

MOFETE ETNA ROSSO DOC 2020 - PALMENTO COSTANZO
The "Mofete" is an Etna Rosso DOC that the Costanzo family, owner of the Palmento Costanzo winery, creates starting from two native vineyards: Nerello Mascalese and Nerello Cappuccio.
It is characterized by a pale ruby red color, has a bouquet with notes of red fruits, a slight spiciness and some hints of volcanic ash, on the palate it is very fresh, with sweet tannins and a savory finish.
The harvest, carried out in mid-October, is done manually. Then it is fermented in steel and left to refine for 50% 12 months in steel barrels, and for the other 50% 12 months in oak barrels. Finally, after bottling it is left for another 12 months to refine.
Excellent to combine with a good second course of meat, perhaps Beef or Lamb. But just as good to combine with a typical pasta dish.
PRODUCTION AREA: C.da Santo Spirito, Passopisciaro, Etna.
SOIL: Volcanic sands, stones and exclusive rocks.
GRAPES: Nerello Mascalese 80% - Nerello Cappuccio 20%
TRAINING SYSTEM: small tree supported by chestnut poles. Plants up to 30 years of age.
HARVEST: manual, second ten days of October.
VINIFICATION: fermentation in steel with indigenous yeasts. Malolactic fermentation carried out entirely.
AGING: 50% 12 months in steel and 50% 12 months in 50 hl oak. 12 months in the bottle.
COLOR: pale ruby red
