DENOMINATION: Sicilia DOC

GRAPES: Merlot and Cabernet Sauvignon.

PRODUCTION AREA: South-western Sicily, territory of Casale Bianco (Contessa Entellina).

SOILS AND CLIMATE: altitude from 200 to 400 m above sea level; hilly orography; clayey soils with sub-alkaline reaction (pH from 7.5 to 7.9) rich in nutrients (potassium, magnesium, calcium, iron, manganese, zinc) and total limestone from 20 to 35%. Mild winters; dry and windy summers with strong temperature variations between day and night

VINEYARD: espalier training with spurred cordon pruning, leaving 6 to 8 buds for each plant. Plant density of about 5,000 plants per hectare with yields of about 70 - 80 quintals / ha.

VINTAGE: in Contessa Entellina after two years with little rain, in 2018 there was 743 mm of rain, a figure that is above the average * (667 mm) of this area. Much of the precipitation was distributed in spring; only in some plots there were intense rains in summer. The integrated management of agronomic practices, from pruning to thinning up to the choice of different harvesting moments, inspired by eco-sustainable viticulture, has allowed us to have healthy and well-ripened grapes. The harvest was thus in line with the company's qualitative objectives which are oriented towards prestigious productions. * (average rainfall calculated starting from the 2003 harvest and measured by SIAS, Sicilian Agrometeorological Service)

HARVEST: manual harvesting in crates with careful selection of the grapes in the vineyard. The harvest of the grapes destined for Angheli began in the second half of August with the Merlot and ended on 19 September with the harvest of the Cabernet Sauvignon.

VINIFICATION: upon reception in the cellar, further selection of the bunches on the vibrating table and subsequent selection of the grapes thanks to a latest generation destemmer, able to discard the green and overripe ones. Fermentation in steel with maceration on the skins for about 11-13 days at a temperature of 28 ° C. Aging for about 12 months in second passage French oak barriques and at least 24 months in the bottle.

ANALYTICAL DATA: alcohol 14.15% vol. - total acidity: 6.0 g / l - pH 3.64
