Unanimously considered one of the greatest masterpieces of Giuseppe Quintarelli's cellar, Rosso del Bepi is capable of giving emotions that few other wines in the world will be able to give. Its structure and preparation methods allow it to be the perfect accompaniment to dishes based on red meat, game or aged cheeses. The slow drying of the grapes with the development of noble molds until January, the maceration on the skins for 20 days, the fermentation for 45 days and 7 long years in large Slavonian oak barrels, accompanied by the careful selection of Cabernet Sauvignon grapes, Corvina and Rondinella give this wine, in addition to the classic ruby red color, an inebriating and intense aroma with a prevalence of ripe red fruit, morello cherry, jam, licorice and cocoa. On the palate it is enveloping, round, refined with velvety and sweet tannins, with a very long persistence. There is not much more to say except that it would be a real shame to miss such a bottle!
